All plants consist of the polymeric sugar cellulose and store energy mainly in the form of starch. Insects and crustaceans owe their shape to the sugar molecule chitin. Sugar is the basis of many special functions also in the human body. Since time immemorial, sugar has been used as a source of energy for human consumption.
